Lentil salad with whipped feta
A quick and delicious salad for any occasion that goes well with grilled meats.

Method:
- In a food processor blend the feta, cottage cheese and lemon zest until smooth.
- Spread the blended feta mixture over 4 individual or 1 large serving plate.
- Spread the salad leaves, avocado, lentils, sunflower seeds and red onion over the top.
- Mix together the lemon juice and olive oil and drizzle over the salad then serve.
Tips
Where possible use salt-reduced feta.
You can also use the whipped feta as a dip.
This salad is great served with grilled fish or chicken.
