Baked salmon with a pesto crumb
This divine baked salmon recipe will make a beautiful centre piece for a special occasion or just a fabulous meal.

Method
- Preheat oven to 200°C
- Place onion, courgette, lemon and oil in a large roasting dish and mix thoroughly
- Roast for approximately 20 minutes or until vegetables are beginning to brown then remove from oven
- Blend the bread in a food processor to create fresh breadcrumbs
- Add garlic, pesto and parsley and blend until combined
- Place salmon fillet on top of roasted vegetables
- Spread crumb mixture over salmon
- Return to oven and continue to cook for 15-20 minutes, or until the salmon is cooked through and the crumb mixture is beginning to brown.
Tips
- Basil pesto is great in this recipe, but for something a little different try our watercress pesto.
