
BBQ chicken with parsley lemon sauce
A delicious summer BBQ dish, the tangy parsley and lemon sauce is the perfect accompaniment to this chicken

Method
Chicken
- Mix together the lemon juice and zest, garlic, herbs, oil, mustard, salt, paprika and coriander to make the marinade
- Place chicken in a sealable container and pour over marinade, spread marinade over all surfaces of the chicken
- Place lid on container and refrigerate overnight
- 2 hours prior to eating - heat a BBQ with lid to approximately 180°C
- Place on BBQ rack (or oven tray if cooking in oven) and put lid back on to retain heat
- Turn the chicken over every 15-20 minutes to cook evenly on both sides
- Cook for approximately 1- 1 ½ hours or until the chicken is cooked thoroughly and no blood is present
- Remove from BBQ and cover with tin foil to rest for 30 minutes before serving.
Parsley sauce
- Place all ingredients in a food processor and blend until smooth
- Refrigerate until ready to serve
Tips
If you don’t have a BBQ, cook in a roasting tray in an oven pre-heated to 180°C. If cooking in an oven you also don’t need to butterfly the chicken, simply marinade and roast whole.
