Method
- Heat oil in a large pot
- Add meat and brown on each side
- Add onions and carrots and continue to cook
- Add remaining ingredients except watercress
- Cover with cold water and bring to the boil
- Skim fat off the surface occasionally
- Reduce heat and simmer for 2 hours until meat is tender and vegetables are cooked
- Add watercress/puha just before the end of cooking.
