Method
- Pre-heat oven to 180°C and grease a 12 cup, medium sized muffin tray
- Mix the eggs, oil, yoghurt, milk, brown sugar and dates
- In a separate bowl sift the flour, bran flakes and baking soda
- Mix the dry ingredients into the wet ingredients gently until just combined
- Spoon mixture evenly into a greased muffin tray
- Bake for approximately 15 minutes or until browned and a skewer can be inserted and comes out clean
- Turn out onto a wire rack to cool
- Store in an airtight container for up to 4 days at room temperature or freeze for up to 1 month.
