Chicken tray bake

This chicken tray bake recipe couldn't be easier. Simply chop the veges and chicken, pop them on a baking tray and bake. If you're looking for a meal prep recipe - this one is ideal.

Method

  1. Heat oven to 225°
  2. Place chicken, capsicum, onion and courgette on one or two roasting trays - the ingredients need enough room to spread out evenly in one layer
  3. Drizzle with oil and sprinkle with spice mix
  4. Roast for approximately 30 minutes or until the chicken is cooked through
  5. Remove from oven and mix through lemon juice
  6. Allow to cool.

Tip

If you don't have cajun mixed spice use: 1 tsp paprika, 1 tsp ground coriander, 1 tsp ground cumin.
