Method
- Heat oven to 225°
- Place chicken, capsicum, onion and courgette on one or two roasting trays - the ingredients need enough room to spread out evenly in one layer
- Drizzle with oil and sprinkle with spice mix
- Roast for approximately 30 minutes or until the chicken is cooked through
- Remove from oven and mix through lemon juice
- Allow to cool.
Tip
If you don't have cajun mixed spice use: 1 tsp paprika, 1 tsp ground coriander, 1 tsp ground cumin.
