
Chickpea fattoush salad
This is a delicious salad full of flavour and amazing coloured vegetables. Enjoy this as a side salad or a light meal by itself.

Method
- Heat oven to 200°C
- Lay Lebanese bread out on a baking tray
- Sprinkle with sumac
- Bake until crisp
- Cool and break into bite sized pieces
- Mix all other ingredients together with Lebanese bread
- Serve within 4 hours of mixing to ensure Lebanese bread is still slightly crunchy
