Method
- Heat oil in a large pot on medium heat.
- Gently cook the onion and garlic until soft.
- Add the mince and brown, drain off any extra fat.
- Add the mixed vegetables to the mince and stir well.
- Add the chopped tomatoes, chilli beans and corn kernels.
- Cook gently until the sauce has thickened.
Serve with rice, pita bread, pasta, bread or mashed potatoes.
Tips
- Add some fresh or dried herbs to add more flavor, like rosemary or parsley. Choose seasonal fresh vegetables to save on cost.
