Curried pork lap lap
This tasty dish is based on a traditional recipe from Vanuatu. It’s full of flavour and goodness that the whole family can enjoy.

Method
- Heat oven to 200°C
- In a large bowl mix together all of the ingredients except for the banana leaves
- Divide the mixture between the two 25cm square banana leaves or pieces of baking paper and fold over to make an enclosed parcel
- Place parcels on a baking tray or roasting dish and bake for 30 minutes
- Remove from oven and served wrapped
Tip
Freeze the leftover coconut cream in ice cube trays.
