
Flourless banana and berry slice
This stunning slice has it all- great flavour and texture, it looks fantastic and is full of wonderful healthy ingredients. This will become a family favourite or a best seller for sure.

Method
Banana slice
- Heat oven to 160°C
- Beat together the mashed banana, eggs, honey and vegetable oil
- Mix together the baking soda and lemon juice
- Add baking soda and lemon juice along with ground almonds to the banana mixture and mix well
- Pour into a greased slice tray or roasting dish lined with baking paper to a depth of approximately 2cm, ensure the tray you use has sides that are at least 4cm high so you can pour the topping over the cooked cake without it overflowing
- Bake slice for approximately 30 minutes or until lightly browned and springy to the touch
- Remove from oven and allow to cool in the tray
Berry topping
- Heat berries slowly in a saucepan until the juice runs from them and they are cooked. Avoid stirring them so they don't lose their shape
- In another saucepan bring the water to the boil and dissolve the sugar and gelatine in it
- Add the water to the berries and allow to cool to room temperature
Assembly
- When the slice and berry topping are cool pour the berry topping over the slice still in the slice tin
- Refrigerate until the topping has set
- Remove from refrigerator and cut into slices
