A delicious soup couldn’t be easier than this.

Method
- Add oil, onion, carrot and celery to a large pot and cook on a medium heat until soft.
- Add any starchy vegetables such as kūmara, potato or pumpkin.
- Add stock and simmer gently for 15 minutes or until vegetables are soft.
- Add any finely chopped greens such as bean, spinach or broccoli and cook for a further 5-10 minutes or until tender.
Serve with wholemeal bread.
