An easy, delicious kūmara salad. We love the refreshing combination of orange, kūmara and watercress.

- In a large bowl mix together the kūmara, orange and watercress
- In a separate bowl mix together all the dressing ingredients
- Add the dressing to the salad and mix gently through

Use the leaves and finer stalks of watercress, discard the tougher stalks.
