These quick and easy lettuce cup ideas make a great lunch. Hummus and avocado, cheese and onion, tuna and corn, curried egg.

Method:

  1. Wash and dry the lettuce leaves.
  2. Fill each lettuce leaf with your choice of filling.
  3. Fold over like a taco to eat.

Tips:

We find that small cos lettuces work best for these cups, but any other lettuce with large enough leaves will also work just as well.

These lettuce cups can be filled with any ingredients you would usually put in a sandwich.

Likewise, if you wanted to have these with whole grain bread you could place the entire lettuce cup in between two pieces to make a sandwich.
