Method
- Place the chicken in a plastic bag
- Combine garlic, ginger, juice and soy sauce and add to the chicken
- Place the bag in a dish and refrigerate for 2 hours, turning the bag occasionally
- Preheat the oven to 180°C
- Remove chicken from marinade and place in a baking dish
- Place a lemon slice on each thigh
- Bake in preheated oven for oven for 25 - 30 minutes or until the chicken in thoroughly cooked
- Garnish with the thyme sprigs
- Serve with roasted vine tomatoes
