
Minestrone
Minestrone is an Italian soup that's full of goodness and will keep you feeling full for hours. We've made ours using pearl barley and lots of healthy vegetables.

Method
- In a large pot heat the oil and cook the onion, carrot and potato over a low to medium heat until the onion is soft
- Add garlic and cook for a further minute
- Add remaining ingredients and bring to a gentle simmer
- Cook for approximately 1 hour or until the pearl barley has become soft.
