Method
- Heat oil in a large pot
- Add onion, carrot and celery, cook over a low heat until soft
- Add garlic, kūmara, tomato paste and water and bring to a simmer, cook for 30 minutes
- Add mussels and cover with a lid, bring to a simmer and cook until all the mussels have opened
- Mix through lemon juice.
Tip
- Discard mussels that are open before cooking
- Discard mussels that don’t open after cooking.
