
Otai - watermelon smoothie
Here is a great way to use all of those fantastic watermelons.

Method
- Cut the watermelon in half. Using a spoon, scrape the watermelon flesh into a large bowl. Discard the rind and use a spoon to remove the seeds.
- Peel the mango and cut the flesh away from the stone. Finely chop or grate the mango and add to the watermelon.
- Add the pineapple, coconut cream and water, and mix well.
- Serve over ice cubes in a tall glass and garnish with mint leaves.
Tips
- Watermelon should be firm and heavy, and the part of the melon that has been in contact with the ground is yellow. The fruit sounds hollow when tapped.
- If fresh pineapple is not available, use canned pineapple in juice.
