- Place pumpkin, parsley and garlic in a large mixing bowl and mix.
- Add egg and mix through well.
- Add flour and baking powder and mix until just combined.
- Heat oil 1 tablespoon at a time and batch cook fritters. Cook fritters on both sides until golden brown and cooked through.
