Quesadillas
Quesadillas are a quick and easy meal when you’re in a hurry. Make the tortillas from scratch in advance and keep them frozen or buy wraps. Either way this is a great meal.

Method
Tortillas
- Place ingredients in a bowl and mix together, then knead until smooth, it takes about 5 minutes
- Wrap in cling film and let it rest for 30 minutes to 1 hour
- Divide the dough into 8 portions
- Place flour on a board or bench, use a rolling pin to roll the dough into 25cm round discs about the size of a small dinner plate
- Cook in a dry frying pan over medium heat
- When the tortillas blister in the pan turn them over and cook for approximately 30 seconds longer depending on the temperature. They should be soft and only slightly browned in places
- When cooked, stack on top of each other and cover with a damp, clean cloth
- Use them fresh or freeze.
Quesadillas
- Lay 4 tortillas on a board and spread with refried beans
- Sprinkle cheese, carrot and corn over the beans
- Place remaining tortillas on top of chilli beans and cheese
- Heat a frying pan over a low to medium heat without any oil
- Place filled tortillas in the frying pan and cook slowly, turn over after approximately 3-4 minutes, until both sides are a golden brown. Remove from pan
- Slice in half and serve hot with a salad.
