Semolina and pear pudding

This semolina pudding sets firm enough that it can be cut into slices.  It's a healthy treat everyone can enjoy.

Method

  1. Lightly grease a ring cake tin or suitable mould for turning out the pudding

  2. Place milk, semolina and pear juice in a saucepan and heat slowly until simmering and thickened

  3. Pour into mould and allow to cool

  4. Refrigerate until cold and set before serving

  5. To serve turn pudding out onto a plate and garnish with the pears from 3x 400g cans, serve each portion with a little more of the reserved juice from the cans

  • ¾ cup
    semolina
  • 400g cans pear juice, drained from the pears
  • 1 tsp
    vanilla essence
  • 400g cans pears, natural juice
