
Solomon poi
This lovely dish from the Solomon Islands is a great side for many meals. It’s really easy to make as well.

Method
- Preheat oven to 180°C.
- Combine all the ingredients and mix thoroughly.
- Line a baking dish with tin foil, allowing enough to fold over the top.
- Place the mixture into the baking dish. Fold over the ends of the tin foil to make a parcel.
- Bake for 1 hour.
Tips
- Serve with lean meat and steamed vegetables.
