Solomon poi

This lovely dish from the Solomon Islands is a great side for many meals. It’s really easy to make as well.

Method

  1. Preheat oven to 180°C. 
  2. Combine all the ingredients and mix thoroughly. 
  3. Line a baking dish with tin foil, allowing enough to fold over the top. 
  4. Place the mixture into the baking dish. Fold over the ends of the tin foil to make a parcel. 
  5. Bake for 1 hour.

  • 6 large 
    silverbeet leaves, stalks removed and shredded
  • 1/2 cup
    chopped roasted cashew nuts (optional)
  • 2/3 cup
    diluted coconut cream

    Pepper to taste
