Here's a quick and easy sweet and sour vegetables recipe that uses just a few ingredients. It's ready in less than half an hour too - what's not to like?

Method
- Whisk the pineapple juice, soy sauce, tomato sauce, vinegar, water, cornflour and ginger in a medium saucepan until there are no lumps
- Turn heat on and bring to a gentle simmer, stirring constantly until thickened
- Add pineapple pieces and frozen vegetables and increase heat. Stir often and heat the vegetables until hot
- Remove from the heat and allow to cool.
