Tofu salad with miso dressing

Filled with crunchy veggies and crispy tofu, this versatile salad is a filling and healthy meal with a rich umami flavour.

Method:

  1. Place the carrots, courgettes, apple, spring onion, coriander, tofu and peanuts in a large bowl and mix well.
  1. Mix the miso paste, vinegar, sesame oil and mirin to make the dressing.
  1. Mix the dressing through the vegetables and serve.

Tips:

  • Fried tofu should be available in most supermarkets, but as an alternative, you can slice firm tofu and fry it in a bit of oil until crispy.
  • This salad can be prepared the day before - keep the dressing in a separate container and mix just before serving.
  • Mirin adds a little sweetness to balance the vinegar. If you don’t have this, use 1 tsp of sugar instead.
