Tuna, egg and green banana salad

Method
- Bring a saucepan of water to the boil
- Gently place the eggs in the boiling water and boil for 10 minutes
- Remove the eggs from the boiling water and cool in a bowl of cold water until cold enough to handle
- While the eggs are cooling boil beans for 3-4 minutes until cooked but still slightly crunchy and bright green. Drain the beans in a colander under cold running water until cool
- Peel the eggs and cut into quarters
- Drain the water from the tuna
- Arrange the lettuce on a large platter or individual serving plates. Scatter the cooked taro/green bananas/cassava/plantain, eggs, tomatoes, green beans and tuna over the lettuce
- Garnish with lemon wedges before serving.

- Replace beans with asparagus
