Vegetable scones

Here's a tasty cheese scone recipe loaded with vegetables. Packed with spinach, tomatoes, carrots and onion, all the flavours in these scones means you don't even need to top them with anything.

Method

  1. Preheat oven to 200°C
  2. Place wholemeal flour in a bowl, sift in flour and baking powder
  3. Add cheese, chopped carrot, spinach, onion and tomatoes. Mix lightly.
  4. Stir in milk and combine
  5. Turn out onto a board sprinkled with flour
  6. Pat lightly into a square, cut into squares
  7. Place on baking tray, into the oven and bake until golden (approximately 15 minutes)
  8. Remove from oven and cool on tray.

    carrot, finely chopped

    spinach or parsley, finely chopped

  • 1 large or 4 cherry 
    tomatoes, chopped
  • ¾ cup
    low fat milk
