This watermelon and feta salad is bursting with fresh flavours, the melon is contrasted beautifully with the feta.

Method
- Cut the watermelon into bite-size pieces and arrange on a serving dish.
- Peel cucumbers, scoop out seeds and cut into small cubes.
- Combine cucumber, spring onions, mint leaves and lemon juice in a bowl.
- Place the cucumber mixture over the plated watermelon then sprinkle with feta cheese.
- Serve with lean meat, taro, kumara or potato and seasonal vegetables.
