
Balanced lemony chicken steaks with bulgar and yoghurt
A light and bright way to sparkle up your dinnertime brought to you by Bargain Box. Succulent pan-seared chicken breasts sit on a bed of fluffy bulgur wheat and veggies, topped with a lemon honey yoghurt.

Method
Cook it
- Boil a kettle of water.
- Grate carrots.
- Cut cauliflower into small florets.
- Heat butter and oil in a pot on medium-high.
- Cook carrot and cauliflower for about 4 minutes, until soft.
- Add bulgur and boiling water measure and bring to the boil.
- Once simmering, cover with a lid, drop heat to low and cook for 10 minutes.
- Remove from heat, lid on and steam for 10 minutes.
- Liquid should be absorbed and grains tender.
- Once cooked, fold through spinach and lightly season to taste with salt and pepper.
Prep it
- Mince garlic.
- Zest lemon.
- Pat chicken dry.
- Cut into steaks by placing your hand flat on top of chicken and slicing through horizontally.
- Add to garlic, lemon, and chicken to a bowl.
- Mix to combine.
Sear it
- Heat oil in a fry pan on medium-high.
- Cook chicken for 3-5 minutes on each side, or until golden and cooked through.
- Set aside to rest.
Finish it
- In a bowl, combine yoghurt, lemon juice and honey.
- Thinly slice chicken.
Eat it
- Serve bulgur topped with chicken.
- Dollop over honey yoghurt.
