Balanced pork poke bowl with grilled pineapple and brown rice

An easy nutritious twist on a Hawaiian-style poke bowl brought to you by Bargain Box. Pan-fry pork mince before serving with grilled pineapple and nutty brown rice. Sprinkle with sesame seeds and enjoy this balanced delight.

Method

  1. Boil it 
  2. Boil a pot of water (brown rice needs a lot of water so make sure you have plenty in the pot).  
  3. Add rice to the pot of boiling water. 
  4. Boil, uncovered, for 25-30 minutes, until grains are tender.  
  5. Drain well through a sieve.  

Cook it 

  1. Dice onion. 
  2. Heat oil in a fry pan on medium-high.  
  3. Cook pork, onion, BBQ seasoning spices and a pinch of salt for 6-9 minutes, until browned.  
  4. Stir through BBQ sauce and continue to cook for 1 more minute. 

Grill it 

  1. Drain pineapple and reserve 1 tbsp of pineapple juice.  
  2. Heat oil in a second fry pan on medium-high. 
  3. Cook pineapple for 3-4 minutes, until browned.  

Toss it 

  1. Thinly slice cucumber.  
  2. Peel carrot into ribbons.  
  3. Toss cabbage in a bowl with vinegar and reserved pineapple juice. 

Eat it 

  1. Build your poke bowl with rice, pork, pineapple, and veggies. 
  2. Sprinkle over sesame seeds.
