
BBQ corn salad
Nothing says summer more than fresh sweet corn on a BBQ. Bring on the sunshine!

Method
- Pre-heat BBQ
- Remove husks from corn
- Place corn cobs on BBQ and grill on all sides until slightly blackened all over
- Remove from BBQ and allow to cool
- Cut kernels from corn cobs and place in a large bowl
- Add remaining ingredients and mix gently.
Tips
- Corn can be BBQ'd in the husks as well. Cook them until the husks are burnt all over then remove from the BBQ and allow to cool before peeling the husks off.
- The corn inside will be steamed and have a delicious flavour. Removing the husks before cooking will add more colour and a stronger BBQ flavour.
- Use lemon juice if limes are not available.

- 1 cupchopped coriander
- 1chilli, chopped
- 3 tbsplime juice
- 1 tbspolive oil
