Beautiful baked eggs
This is an easy way to prepare eggs with the flavours only limited by what you have available and your imagination. Below are four variations we thought would get you started.

Method
Instructions for all baked eggs
- Heat oven to 180°C
- Fill a roasting dish or similar baking dish with high sides with boiling water deep enough to come half way up the small bowls or cups you choose to make your baked eggs in
- Place ingredients in the bowls
- Crack an egg on top of other ingredients in bowls
- Gently place bowls in the hot water and bake in oven for approximately 15 minutes or until just set
- Carefully lift the bowls out of the hot water to serve
Chilli bean and cheese
- Use canned chilli beans (or homemade)
- Sprinkle cheese on top of egg and follow instructions above
Sautéed leek and smoked fish
- Heat a frying pan over low heat
- Add chopped leeks and a small amount of oil
- Cook slowly until leeks are soft
- Follow instructions above for baked eggs
Mushroom and cheese sauce
- Prepare the cheese by heating the milk in saucepan until just below boiling point
- Wet cornflour with water
- Slowly mix cornflour mixture into hot milk stirring constantly until thickened
- Stir in grated cheese
- Heat a frying pan over low heat
- Add mushrooms and a small amount of vegetable oil
- Cook slowly until mushrooms have softened
- Follow instructions above for baked eggs
Alternatively ham, spinach and cheese sauce
- In a saucepan place spinach and a little water
- Heat over high heat and cook until the spinach has wilted
- Drain spinach and hold under cold running water until cool
- Squeeze out excess water and chop finely
- Follow instructions above for mushroom and cheese sauce, replacing the mushrooms with the spinach and ham
