
Bircher muesli with plum compote
This is a delicious light breakfast that will set you up for the day.

Method
Muesli
- In a food processor grind the Brazil nuts, toasted almonds and pumpkin seeds until the texture of coarse breadcrumbs
- Mix together ground nuts/seeds, oats, coconut, cranberries, raisins and dried apricots
- Store in an airtight container
Plum compote
- Place sliced plums and orange juice in a saucepan
- Heat gently with a lid on and cook until plums are soft through
- Remove from heat and allow to cool
- Store in an airtight in the refrigerator
To serve
- Mix grated apple, milk and muesli together
- Refrigerate overnight in a plastic container
- Place in serving bowls and top with plum compote
- Add more low fat milk if desired
For each portion use:
- 50g dry muesli
- 50g grated apple
- 50ml low fat milk
- 70g plum compote

- 25 graisins

- 500 mlreduced fat milk
