Bircher muesli with plum compote

This is a delicious light breakfast that will set you up for the day.

Method

Muesli

  1. In a food processor grind the Brazil nuts, toasted almonds and pumpkin seeds until the texture of coarse breadcrumbs
  2. Mix together ground nuts/seeds, oats, coconut, cranberries, raisins and dried apricots
  3. Store in an airtight container

Plum compote

  1. Place sliced plums and orange juice in a saucepan
  2. Heat gently with a lid on and cook until plums are soft through
  3. Remove from heat and allow to cool
  4. Store in an airtight in the refrigerator

To serve

  1. Mix grated apple, milk and muesli together
  2. Refrigerate overnight in a plastic container
  3. Place in serving bowls and top with plum compote
  4. Add more low fat milk if desired

    fresh plums, cut into quarters
  • 85 ml
    orange juice

  • 500 g
    grated fresh apple
  • 500 ml
    reduced fat milk
