Caramelised onion soup
The longer and slower the onions cook in this soup the better it will taste. It’s a great weekend recipe when you have the time.

Method
- Heat oil in a large pot.
- Add onions and stock cubes. Cook over a low heat until onions are soft and beginning to brown slightly. This will take approximately 1 hour.
- Add water and vinegar and bring to the boil. Reduce soup to a simmer and cook for a further 30 minutes.
Tip
To make this dish vegetarian use vegetable stock cubes.
