
Cauliflower tabbouleh
A vegetable version of a wheat based classic. Ideal as a side salad or a one bowl meal.

Method
- Place the cauliflower in a food processor in small batches and pulse blend until it resembles couscous
- In a large frying pan heat the oil and sauté the cauliflower and garlic over medium heat until soft
- Remove from heat and allow to cool
- When cool mix through remaining ingredients.

- 1 cupfresh parsley, chopped finely
- 1/4 cupfresh mint, chopped finely
