Chicken and broccoli stir-fry

Packed full of crunchy beautiful vegetables, this chicken stir-fry is superb.

Method

  1. Heat oil in a large frying pan over a high heat
  2. Add onion, carrots and broccoli and stir-fry for 2 minutes
  3. Add ginger and garlic and continue to cook while mixing for a further minute
  4. Add soy sauce, vinegar and chicken. Continue to stir-fry for another minute
  5. Mix together the cornflour and water then add slowly to the pan while stirring and cook until the sauce has thickened
  6. Remove from heat and serve

Alternatively:

  • Use 1/4 teaspoon of dried ginger in place of fresh ginger
  • Use frozen broccoli and carrots in place of fresh
  • To make this dish feed more people add 2 beaten eggs at the same time as the ginger and garlic, 1 cup of cooked tofu or 1-2 cups of frozen vegetables.

    garlic, crushed
  • 2 tbsp
    soy sauce
  • 1 tbsp
    white vinegar
  • 2 1/2 cups
    shredded cooked chicken
  • 2 tsp
    cornflour
  • 1/2 cup
    water
