Chicken and broccoli stir-fry
Packed full of crunchy beautiful vegetables, this chicken stir-fry is superb.

Method
- Heat oil in a large frying pan over a high heat
- Add onion, carrots and broccoli and stir-fry for 2 minutes
- Add ginger and garlic and continue to cook while mixing for a further minute
- Add soy sauce, vinegar and chicken. Continue to stir-fry for another minute
- Mix together the cornflour and water then add slowly to the pan while stirring and cook until the sauce has thickened
- Remove from heat and serve
Alternatively:
- Use 1/4 teaspoon of dried ginger in place of fresh ginger
- Use frozen broccoli and carrots in place of fresh
- To make this dish feed more people add 2 beaten eggs at the same time as the ginger and garlic, 1 cup of cooked tofu or 1-2 cups of frozen vegetables.
