
Cocoa rice
This is a delicious rice pudding with a great chocolatey and coconut flavour. Young and old will love it.

Method
- Place all ingredients, except coconut cream, in a medium pot.
- Bring to the boil and reduce heat to a gentle simmer. Stir occasionally to avoid mixture sticking to the bottom of the pot.
- Continue to cook slowly until the rice is cooked (or at the desired consistency) and covered in a creamy chocolate sauce, about 30–40 minutes.
- Remove from heat and stir in the coconut cream.
Tips
- Using Koko Samoa will give a more traditional bitter-sweet taste.
- You can use brown rice with this recipe. The cooking time may be longer and add more water if needed for the desired consistency.
