Coconut chicken slaw
This delicious salad recipe is full of fresh flavours and colours. All the ingredients can be prepared ahead of time and mixed quickly for a stress-free meal time. This recipe has been adapted from a version found on ilovecoconutcream.com.

Method
- Place coconut cream, water, ginger, garlic and fish sauce into a small saucepan and bring to a boil
- Remove from heat and allow to cool
- Marinate the red onion in the vinegar for 30 minutes or more
- When ready to serve, mix together the remaining ingredients, including the marinated onion and chicken.
