Make our tasty courgette pizza
Method
- Preheat the oven to 200°C. Place baking paper on a baking tray.
- Place courgette in a clean tea towel or over a sieve and squeeze out as much moisture as possible into a bowl.
- Into another bowl, combine courgette, flour, garlic, herbs, egg, and cheese. Mix the dough with clean hands and press into a circle 1cm thick onto baking paper on the baking tray. Depending on how much liquid is squeezed out of the grated courgette will determine how wet the mixture will be.
- Bake in the oven for about 10 minutes until lightly golden brown and the bottom is starting to brown.
- Carefully remove from the oven, flip over and top with pizza sauce and cheese. Bake for another 3-5 minutes until the cheese is melted and bubbly.
- Remove from oven, allow to cool slightly, then slice into 8 pieces and serve.
Tip
- Rub a drop of oil between your hands before pressing the dough to stop the mixture sticking to hands.
