Follow the steps in the video to make the chowder
Method
- Heat oil in a large saucepan
- Add onion, carrot and corn to the saucepan and cook over a medium heat, stirring regularly until softened
- Add garlic and cook while stirring for a further minute
- Add stock cube, water and soy cream and bring to a gentle simmer, cook for approximately 20-30 minutes
Serve as is or blend until smooth depending on preference, then garnish with parsley.
