Method
- Place dates in a bowl and cover with boiling water. Soak for 10 minutes then drain
- Add drained dates, peanut butter, ground almonds, cocoa powder and vanilla essence into a food processor and blend until smooth
- Roll the mixture into bite size balls and form into egg shapes
- Melt the chocolate in a glass bowl, either over a pot of hot water or in the microwave for 10-20 seconds periods stirring in between
- Dip the bottom of the egg shaped bliss balls into the chocolate, then into the coconut thread. Place on a flat tray and refrigerate until the chocolate has set
- Keep in a sealed container in the fridge
- Makes 25 balls.
