Easy beef curry
This tasty beef curry recipe is easy to make and can be prepared a day in advance for a convenient meal.

This easy beef curry recipe is lower in fat without sacrificing flavour. It will taste as good as takeaway.
Method
- Heat oil in a large pot
- Add beef and cook over a medium to high heat, brown well on each side
- Remove beef from the pot and reduce the heat to low
- Add onion and carrot and sauté until soft and beginning to brown
- Add garlic, curry powder, garam masala, stock cube and sauté briefly
- Return the beef and add canned tomatoes and water
- Bring to a gentle simmer
- Cover and cook slowly for approximately 1 hour
- Remove lid and continue to cook over a low heat until the meat is tender and the sauce has thickened
- Add the cauliflower and cook for a further 10 minutes or until tender
- Serve with brown rice and coriander sprinkled on top.
Tip
This recipe can also be cooked in a slow cooker.
For best results use a pot on the stove and follow the recipe above up until the tomatoes and water are added. At that point transfer all ingredients into the slow cooker and cook as per instructions on the slow cooker.
You could also place all ingredients into the slow cooker from the beginning and cook, however the flavour won't be quite as rich.
