Fish baked with tomato and olives
This delicious dish has been adapted from a Jamie Oliver recipe. It's super easy to make and tastes great. The whole family will enjoy this.

Method
- Preheat oven to 210°C
- Heat oil in a saucepan
- Add onion and sautee until soft
- Add garlic and sautee for 10 seconds
- Add whole peeled tomatoes and balsamic vinegar
- Break up the tomatoes slightly but leave them in large pieces
- Add olives and simmer for approximately 15 minutes
- Cut hoki fillets in half
- Pour tomato sauce into a roasting dish
- Place hoki pieces on top of tomato sauce
- Sprinkle pepper over hoki
- Cook in oven for approximately 10-15 minutes or until just cooked through
- Shred basil and sprinkle over hoki and tomato sauce
