Gazpacho soup
A simple and refreshing chilled soup with all the fresh flavours of summer.

Method steps:
- Cover the bread with approximately 1/2 cup water and soak for 5 minutes
- Remove bread and squeeze out as much water as possible
- Place soaked bread and all other ingredients in a blender and blend until smooth
- Add a little ice or water if the soup is too thick
- Refrigerate until ready to serve.
Tips
This recipe is very flexible and the only ingredient you really need are the tomatoes. Feel free to leave out any of the other vegetables if you don't have them. Or add more of the other vegetables if that's what you like or have on hand.
