
Ginger melon balls
An easy, cool, summer fruit appetizer

Method
- Soak the crystallised ginger in boiling water for 5 minutes to remove the sugar. Drain and chop finely
- Cut the melons in half and discard the seeds
- Using a melon baller, scoop the melon into balls and place in to a bowl
- Reserve the juice and mix with the green ginger wine and ginger
- Pour over the melon balls. Marinate in the refrigerator for at least 2 hours before serving
- Serve chilled garnished with mint
Tip
A small watermelon may be used in place of the rock or prince melon
