Greek Beef Mezze Plates

Method:
Make Tuscan spices
- Mix together Tuscan Spice ingredients.
Cook bulgur
- Add 1 tsp of Tuscan Spices, a pinch of salt and bulgar to a medium pot and cook on medium heat for about 1 minute, until fragrant.
- Add water measure and bring to the boil.
- Cover with a lid, drop heat to low and cook for 10 minutes. Take off heat, lid on and steam, for 10 minutes. There should be no liquid and the grains will be tender. Fluff grains with a fork and season to taste with salt.
Cook it
- Dice onion.
- Heat oil in a large fry pan on medium-high heat.
- Cook onion for 2 minutes, until soft.
- Add remaining Tuscan Spices and cook for about 30 seconds, until fragrant.
- Add beef and cook for 2-3 minutes, until browned.
- Add stock and simmer, stirring occasionally for 4-5 minutes, until liquid has almost absorbed. Season to taste with salt and pepper.
Prep it
- Separate lettuce leaves (if using).
- Thinly slice radish.
- Dice cucumber.
- Crumble feta.
- Arrange on a big board or platter.
Eat it
- Spoon bulgur onto plates and top with beef.
- Help yourself to veggies and garnishes.
Tip:
Switch baby cos lettuce and radish for spinach and frozen corn in winter months.
