Method
- Pre-heat the grill in oven
- Place tomatoes, capsicum, pineapple, spring onion, coriander, lemon juice and oil in a large bowl and refrigerate until ready to serve
- Place fish fillets on a baking tray and place under a hot grill, turn once and continue to grill until the fish is cooked through
- Place each wrap on a plate, divide the lettuce among them, top with grilled fish and pineapple and tomato salsa
- Roll up and serve
