Kūmara and meatball tray bake
A filling, easy and flexible meal for the whole family.

Method:
- Pre-heat oven to 225°C.
- Place kumara and onion in a large roasting dish and mix through oil to coat.
- Roast for approximately 15 minutes.
- While the vegetables are roasting mix together the beef mince, egg, breadcrumbs, grated carrot, chopped parsley and tomato paste until well mixed, then roll into balls.
- Remove vegetable from oven and mix through the canned tomatoes then place the meatballs on top of the vegetables.
- Return to the oven and roast for a further 20-30 minutes or until the meatballs are golden brown and the canned tomatoes have nearly dried up then remove from oven.
- Boil or microwave peas until hot then sprinkle over the roasted vegetables and meatballs before serving.
Tips:
- If kūmara are not available, use potato, pumpkin or carrot instead.
- Add 1 Tbsp of Moroccan seasoning to the mince mixture for a Moroccan twist.
- Garnish with extra parsley and serve with a handful of spinach or other leafy greens.
