Mac n’ cheese with cauliflower sauce
Here's a mac and cheese recipe with a healthy spin. Bonus tip: the cauliflower cheese sauce in this recipe works well in any recipe needing a cheese sauce.

Method
- Preheat oven to 200°C
- Bring a large pot of water to the boil
- Add cauliflower and cook until a fork can be inserted into the cauliflower easily
- Remove the cauliflower from the water and bring back to the boil
- Place the drained cauliflower, cheese, mustard and ½-1 cup of the cooking water into a food processor and blend until very smooth
- Add water to thin the sauce until becomes the consistency of a thick soup
- Add the pasta to the boiling water and cook until tender then drain
- Mix the sauce, pasta and mixed vegetables together and place in a large baking dish
- Sprinkle with breadcrumbs
- Bake for approximately 20-30 minutes or until golden brown and steaming hot.
Tip
The cauliflower sauce can be frozen. Make double the quantity by using the whole cauliflower.
