Minted pea soup
This super easy recipe can be made using fresh or frozen peas and will be a hit any time of the year.

Method
- Heat oil in a cooking pot.
- Add onion and cook slowly until translucent and soft.
- Add garlic and cook for a further minute.
- Add vegetable or chicken stock and bring to the boil.
- Add peas and mint and cook until peas are hot.
- Remove from heat and blend until smooth.
