
Haloumi and broccolini pasta
Stuck for ideas for work lunches? This orzo pasta salad is a great meal you can have hot or cold. Have it for dinner or the following day in a lunch box.

Method
- Bring a large pot of water to a boil and cook the pasta for approximately 7 minutes
- Add the broccolini and cook for a further 3 minutes until the pasta and broccolini are just cooked
- Drain and set aside
- Slice the haloumi into 1cm thick slices
- Heat a frying pan and cook the haloumi on each side until browned
- Remove from the pan and chop into smaller pieces
- Place cooked pasta, broccolini, haloumi, cherry tomatoes and pumpkin seeds in a large bowl and mix to combine
- In a separate bowl mix the garlic, olive oil, lemon juice and pepper to make the dressing
- Mix the dressing through the pasta and serve.
