Rice and bean salad
Looking for a rice and bean salad? Rice and beans go together so well we just had to make this recipe. It's fresh, filling and full of flavour.

Method
- Rinse the rice under cold running water
- Combine rice and water and cook in a saucepan with lid
- Bring water to the boil then turn down to low
- Once water is below the level of the rice, turn the heat off and leave covered for 10 minutes
- Remove from heat and allow to cool
- When rice is cool, mix with remaining ingredients in a large bowl
- Serve immediately or cover and refrigerate.
Tip
Use barley instead of rice. Use 1 cup barley with 2 ½ cups water and cook same way.

- 1cucumber, de-seeded and diced
